Winter is the ideal time to enjoy this nourishing dessert. Sweet potatoes thrive in the colder months, providing comfort with their natural sweetness and high fiber content. Meanwhile, avocados begin their peak season in February, bringing a creamy texture and heart-healthy fats that make this pudding irresistibly smooth. Together, these two powerhouse ingredients create a dessert that’s both satisfying and packed with essential nutrients.

Ingredients:

  • 1 medium sweet potato, steamed and skin removed
  • 1 ripe avocado
  • 1/3 cup milk of your choice (plus more if needed)
  • 1/3 cup cocoa powder or cacao powder
  • 2-3 tbsp maple syrup
  • 1 ½ tsp vanilla extract

Directions:

  1. Cook the Sweet Potato:
    • Poke holes in the sweet potato with a fork and steam until fork-tender (about 30 minutes).
    • Alternatively, use an air fryer for a faster cooking method.
  2. Blend the Ingredients:
    • Remove the skin from the sweet potato and add it to a blender or food processor.
    • Add the avocado, milk, cocoa powder, maple syrup, and vanilla extract.
  3. Blend Until Smooth:
    • Process until the mixture is silky and creamy.
    • Add more milk as needed to reach your preferred consistency.
  4. Serve & Enjoy:
    • Enjoy immediately for a soft pudding texture or chill for a thicker consistency.
    • Top with fresh berries, shaved dark chocolate, or a dollop of whipped cream.

Shortcut Version:

If you have pre-cooked sweet potato:

  • Scoop the flesh into a blender with the remaining ingredients and blend until smooth.
  • Adjust milk to achieve your desired texture.
