These No-Bake Peanut Butter Energy Bites are the perfect grab-and-go snack—great for a mid-day energy boost, a post-workout bite, or a simple treat to satisfy your sweet tooth. With just a few wholesome ingredients like oats, honey, and chocolate chips, you can whip up these tasty bites in minutes.
Nut-Free? No Problem!
If you have a nut allergy, swap peanut butter for SunButter (made from sunflower seeds) or use any other nut butter like almond or cashew butter. No matter what you choose, these energy bites will be just as delicious!
No-Bake Peanut Butter Energy Bites Recipe
Ingredients:
- 1 cup old-fashioned oats
- ½ cup peanut butter (or SunButter/any nut butter)
- ⅓ cup honey
- ¼ cup mini chocolate chips
- ½ teaspoon vanilla extract
- A pinch of salt (optional)
Optional Add-Ins for Extra Nutrition:
- 1 tablespoon ground flaxseed – for added fiber and omega-3s
- 1 tablespoon hemp hearts – for extra protein and healthy fats
- 1 tablespoon chia seeds (soaked, see instructions below) – for added texture and nutrition
Why Soak Chia Seeds?
Chia seeds are highly absorbent and can soak up 10 times their weight in water, forming a gel-like consistency. This makes them easier to digest, maximizes nutrient absorption, and prevents them from pulling moisture from your digestive system, which can happen when eating them dry.
How to Soak Chia Seeds:
- Use a 1:10 ratio – Mix 1 tablespoon of chia seeds with 10 tablespoons (½ cup + 2 tbsp) of water.
- Let sit for 20-30 minutes, up to 2 hours for full absorption. The mixture should become thick and gel-like.
- Stir well before adding to your energy bites to ensure even distribution.
Instructions:
- In a mixing bowl, combine oats, peanut butter (or alternative), honey, chocolate chips, vanilla extract, salt, and any add-ins (flaxseed, hemp hearts, soaked chia seeds). Stir until fully mixed.
- Chill the mixture in the refrigerator for about 20-30 minutes to make rolling easier.
- Once firm, scoop out portions and roll into bite-sized balls.
- Store in an airtight container in the fridge for up to one week or freeze for longer storage.
