Seasonal Spoonfuls – Soup: White Chicken Chili

This recipe was provided by Cheri Raeth and her story on why this soup is referred to as “Damn Good Chili”.

Quote Cheri, “I had never tried white chili. We went out to eat with some friends and I ordered white chili for the first time, and loved it. I kept telling everyone how good it was and Sara had heard enough about it and said, “So how good was it mom?, and I answered ” dam good chili Sara. I’ve been teased about that ever since. I now make my own dam good chili!”

Now that we got into the significance of this chili provided by Cheri, lets get into how to actually make it.


White Chicken Chili Recipe

Ingredients:

  • 32 oz. chicken broth
  • 16 oz. jar salsa
  • 8 oz. bag Monterey Jack cheese
  • 1 pint heavy cream
  • 4 cans Great Northern beans
  • 16 oz. bag frozen corn
  • 1 rotisserie chicken

Instructions:

  1. In a large pot, mix together the chicken broth, salsa, and Monterey Jack cheese. Heat this mixture over low heat until the cheese completely melts.
  2. Once the cheese has melted, add the heavy cream, 2 cans of the Great Northern beans, frozen corn, and as much rotisserie chicken as you’d like.
  3. Blend the other 2 cans of Great Northern beans and add them to the chili to thicken it.
  4. Let the chili simmer for a bit to ensure all the flavors meld together.
