That’s my passion,” says Kara, who initially dreamed of opening a soup and salad spot but pivoted to burgers after recognizing the community’s needs.
Kara’s journey to create The Gnarly Heifer started with her own dissatisfaction with restaurant burgers. “I hate going out to eat and getting a burger. I think restaurant hamburgers are absolutely disgusting,” she admits. This led her to experiment with a Blackstone griddle at home, where she perfected the art of the smash burger using farm-fresh beef and local ingredients. The result? A menu that offers everything from classic to adventurous burger creations, each one crafted with high-quality, locally sourced ingredients.
The restaurant isn’t just about burgers, though. It offers a variety of sandwiches, sides, and specials that cater to a wide range of palates. “We pride ourselves in serving real food, not junk food,” Kara explains, emphasizing their use of fresh, local ingredients and minimal reliance on processed foods.
Starting the business during the challenges of the COVID-19 pandemic, Kara was initially driven by a mix of fear and determination. “I thought it was gonna be so hard,” she reflects. But with the support of her family and the community, The Gnarly Heifer has not only survived but thrived, becoming a beloved spot for locals and visitors alike.
Kara’s vision for the restaurant remains community-focused. “My goal is to continue to be here for the community, for my staff, leave a legacy to my family,” she says. While there are plans for future ventures, Kara insists that The Gnarly Heifer will always remain the small, cozy spot that it is today. “We’re never going to expand… That’s part of what makes us who we are.”
